The “3 Great Taste Stars” refers to an award given in the context of the Great Taste Awards. The Great Taste Awards are a food and drink awards programme, organised annually by The Guild of Fine Food in the United Kingdom. These awards are considered among the most prestigious and respected in the food industry.

Great Taste stars are awarded to food and drink products that pass a rigorous tasting process involving expert tasters and industry judges. Judges evaluate the appearance, taste, aroma and texture of the products.

Great Taste stars are awarded based on the level of excellence achieved by the product:

  • 1 star: A product that tastes great.
  • 2 stars: A product that tastes amazing.
  • 3 stars: A product that has an exceptional and distinctive taste, among the best of its kind.

Earning three Great Taste stars is a very high accolade and indicates that the product has been rated as outstanding and among the best in its field.

Anchovies from Cant à brico

Cantabrian anchovies are much more meaty and tasty, because the cold water of the sea in which they live, makes them move continuously and never stand still. After a period of maturation with soft pressing under salt, they are processed one by one, exclusively by expert women, who pass this craft down from mother to daughter. Female hands are preferred to male ones, being smaller and more delicate.

The quality of these fillets is also determined by their size. The larger the fillets, the more accurate it can be  the deboning. This meticulous process makes the processing more elaborate and this differentiates and makes the Cantabrian anchovies exclusive compared to ours.

Limited Edition (net weight 120g – drained weight 70g / 10 fillets)

These anchovies are a limited edition, as it is a product not always available on the market. Much depends on how the anchovy fishing in the Cantabrian Sea goes, which takes place exclusively in spring. June 21 is in fact the last day of the characteristic fish auctions, in which the main producers of the local canning industry participate.

The larger the anchovies, the more valuable and therefore expensive the product. Furthermore, compared to other anchovies, the triple zero limited edition, have an intense flavor and an exceptional aroma, due to a longer maturation period of at least 15 months.

The longer seasoning, under salt in wooden barrels, gives the fillets a brown colour, unlike the smaller and more pinkish fillets.
