Collection: Vermentino

Vermentino is a white grape variety (only in some cases red) semi-aromatic, also known as Pigato in Liguria and Favorita in Piedmont and Corsica. Its origins are unclear: some say it originates from the north-east of Spain in Aragon but the variety does not seem to be cultivated anymore in what should be its native land; others say it was known in Spain as Listan d'Andalusia. In recent years, winemakers have worked to create varieties of Vermentino vinified in purity, to make it more fruity and pleasant. One way to accentuate these characteristics is to anticipate the harvest, so that the must has greater acidity. Wines based on Vermentino are generally dry but delicately soft whites, straw yellow in color, with intense aromas of wild flowers and herbs and a note of yellow peach. They can be paired with seafood appetizers, fish dishes (such as the classic pairing of lobster and Sardinian Vermentino) and octopus but also with the typical Ligurian pansoti with walnut sauce and other Ligurian cuisine dishes.
