Barbaresco is a DOCG wine. The area of ​​origin of the grapes suitable for producing wines with the controlled and guaranteed designation of origin " Barbaresco " includes the entire territory of the municipalities of Barbaresco , Neive, Treiso (formerly a hamlet of Barbaresco ) and the part of the hamlet " San Rocco " formerly part of the municipality of Barbaresco and aggregated to the municipality of Alba, falling within the province of Cuneo. The value of Barbaresco lies in a certain sense in not having "refined blood", but a more popular dimension tied to tradition. We are certainly talking about a wine that has been known since ancient times (the Romans, in the Barbaresco area, planted the first Nebbiolo vines in place of the oaks) and was launched commercially only in 1894 by Domino Gavazza, even if there are irrefutable documents that confirm that the production of Barbaresco began even earlier: the oldest bottle labeled with the name “ Barbaresco ” is from 1870. The production of Barbaresco is based on 100% Nebbiolo grapes, and is permitted exclusively in the municipalities that are part of the DOCG . An area rich in clayey, calcareous soils or a mix of the two, strictly on hills, from which, in fact, those in the valley floor or on the plains are excluded because they are too humid or not sufficiently sunny. The slope of the land and, consequently, its draining nature is an essential aspect for the production of a Barbaresco that reflects the characteristic dry and harmonious structure for which it is sought after and renowned. The yields for the production of Barbaresco must be controlled, at a maximum of 80 quintals per hectare, and the only permitted training system is the espalier with Guyot pruning. The wine has a minimum alcohol content of 12.5% ​​which can increase depending on the vintage and the aging in the cellar, even if for years it has been around 14/14.5%. The aging, together with those of harvesting, vinification and bottling, must be carried out in the DOCG area, with a minimum aging period of 26 months, of which 9 in wooden barrels, and 50 months for the Barbaresco Riserva . Ideal to accompany game, roast meat, such as boiled meats, braised meats and stews. Excellent for aged foods, such as cheeses, or spicy. A perfect wine for long winter evenings, able to entertain with its balanced but cordial nature, which accompanies the tasting of authentic dishes and combines conversations and silences punctuated by a sip of pure pleasure.
