Grillo is a white grape variety for must present above all in western Sicily and in particular in the Marsala area. It is used in purity for the production of some DOC in the province of Trapani. The Grillo variety has been widely cultivated for centuries in the Marsala area and is particularly important in the production of Marsala wine of which it is one of the most used vines, often together with Inzolia and Catarratto. But the best Marsala wine is obtained precisely from Grillo grapes. In the Marsala area, depending on the production area, each wine obtained from Grillo grapes has different organoleptic characteristics. A characteristic of Grillo is its vocation to become a wine with a high alcohol content, sometimes exceeding the gradation of 15/16 °C. Another unusual vocation for a white wine is that of being excellent as an aged wine, for years, decades, or centuries. In addition to Marsala, the grape variety can be vinified in purity with the aid of cryomaceration, thanks to which it is able to produce wines of great organoleptic depth, savoury, fragrant, and above all with a good potential for longevity, superior to all Sicilian whites, with the exception of those from Etna.
