Sauvignon (also called Sauvignon blanc ) is a white grape variety, originating from the Bordeaux area of France. The name derives from the French word sauvage ("wild"), an adjective due to its origins as a native plant of south-west France.
It is one of the most widespread white grape varieties in the winemaking world, with which it is possible to produce fresh white wines with a marked varietal imprint.
The Sauvignon Blanc grape variety, thanks to its ability to adapt, is cultivated extensively in France, Australia, New Zealand, South Africa, California and South America, with a small share also in Italy.
Depending on the climate, Sauvignon grapes can give the wines herbaceous or fresh fruity aromas. In any case, the resulting wines are intended for quick consumption, since aging for more than a year does not improve the organoleptic characteristics in most cases.
The best pairings are with fish dishes and cheeses.
Curiosity It is used in wine therapy for its calming properties, particularly suitable for massages.
