Collection: Cabernet Sauvignon

Cabernet Sauvignon is a red grape variety native to the Gironde, in the areas of Médoc and Graves-Saint-Amant, and is undoubtedly the most versatile variety in the world for the production of high-quality, long-lived wines. This grape variety is widespread in practically all wine-growing areas, also playing an important role among international varieties. It is often used in blends with Cabernet Franc and Merlot, in a blend known as a Bordeaux blend. In Italy, there are many versions, both pure and with other red grape varieties. It has great capacity to adapt to the most diverse climatic conditions and winemaking techniques, maintaining its recognizable characteristics while also perfectly expressing those of the terroir. It is capable of producing wines that are intense in color, rich in tannins and aromatic substances, capable of long aging; thanks to the great structure of this vine, one can dare long macerations and refinement in wood, especially French oak, which allow it to express a complex and fascinating bouquet over time. It has a medium, five-lobed and serrated leaf; medium-small, oblong, cylindrical-pyramidal bunch, of good compactness, with an often evident wing; medium-sized berry, almost round, with a very resistant skin, blue-black with purple shades, rich in bloom. The pulp is astringent, with a violet and rowan flavor. The ripening period is medium-late. Today it is also used for wine therapy as it seems to have beneficial effects in the treatment of hypertension and ischemic problems. TO be paired with first courses based on land, risotto with mushrooms and truffles, it goes well with semi-mature cheeses and jams, cured meats and grilled meats.
