The production areas are Summonte which is located at 650 meters above sea level and Montefredane which is located at 500 meters above sea level. The grape variety is 100% Fiano. The vinification, the grapes are hand-picked and undergo a strict selection in the cellar, where they are directly pressed. The must is cooled to 8° for 24 hours. Fermentation is always controlled around 12 – 13° C for 60 days. The refinement takes place in stainless steel tanks with frequent batonnages for 10 months. Refinement in bottle 3 months before marketing.
