Our “ Boquerones ” are Cantabrian anchovy fillets marinated in wine vinegar and preserved in an excellent 100% Italian extra virgin olive oil. Served as an aperitif or starter, Boquerones are a simple and tasty dish widely used in Spanish tapas. Unlike our marinated anchovies, Spanish Boquerones are much larger and are meatier and more consistent on the palate. The extra virgin olive oil used gives the palate softness and roundness, which is tempered by a light note of vinegar, which leaves a pleasant sensation of freshness.
